WHY THIS EXISTS

ZONE 01

Most steaks you've eaten were:

  • Grain-finished feedlot beef pumped with growth hormones and antibiotics, raised in confinement, and processed through a system that prioritizes yield over the animal, the land, and you
  • Marinated in soy sauce, Worcestershire, and brown sugar because the meat itself had so little flavor it needed a costume
  • Cooked on a non-stick pan coated in PFAS chemicals that off-gas at high heat directly into the protein you're about to feed your family

A ribeye from a grass-fed animal that lived on pasture doesn't need any of that. The fat is yellow because it's rich in beta-carotene and omega-3. The marbling is earned, not engineered. It doesn't need a marinade because it already tastes like something. It just needs salt, heat, and someone who respects what they're holding.

The steak

  • 1 grass-fed bone-in ribeye, 1–1.5 inches (1–1.5 in2.5–4 cm) thick🔒 one steak = one serving conjugated linoleic acid, omega-3 fatty acids, fat-soluble vitamins A, D, E, K2 — all significantly higher in grass-fed versus grain-finished. The bone adds flavor and acts as a heat conductor. This isn't a luxury. This is the standard the industry abandoned for profit

The seasoning

  • generous coarse sea salt🔒 to taste trace minerals, crust formation, flavor extraction. Salt at least 20 minutes before cooking or immediately before — never in between
  • to taste coarse black pepper🔒 to taste piperine — anti-inflammatory, nutrient absorption multiplier. Apply after cooking if you prefer without bitterness — high heat can burn pepper and turn it acrid

The fat

  • 1 tbsp / 15 g beef tallow or ghee high smoke point — 400°F+200°C+ without burning. Butter burns. Olive oil smokes. Seed oils should never have been an option. Tallow from the same animal you're cooking is full-circle sovereignty

The finish

  • 1 tbsp / 14 g grass-fed butterOptional added to the pan in the last 60 seconds for basting. This is the only moment butter belongs in the process
  • 2 sprigs fresh thyme or rosemaryOptional added to the butter baste — the herbs bloom in the hot fat and perfume the surface without overpowering the beef
  • 1 clove garlic, smashedOptional added to the butter baste. The garlic flavors the fat. The fat coats the meat. Three layers deep in sixty seconds

HOW TO MAKE IT

ZONE 03

THE TEMPER

  1. Remove the steak from the fridge 20–30 minutes before cooking. A cold steak hits a hot pan and the exterior burns before the interior comes up to temperature.
  2. Salt generously on all sides during this time. The salt will bead with moisture, dissolve, and reabsorb. By the time the steak hits the pan, the surface is dry and the seasoning is integrated.
  3. Pat the surface dry with paper towel just before cooking. Moisture is the enemy of sear.

THE SEAR

  1. Place your cast-iron skillet over high heat for 3–5 minutes until lightly smoking. The pan needs to be genuinely hot. Not warm. Not "pretty hot." Smoking.
  2. Add tallow or ghee. It should shimmer and smoke immediately.
  3. Lay the steak away from you into the pan. You should hear a violent sizzle. If you don't, pull it out and wait for the pan to get hotter.
  4. Don't move it. Don't press it. Don't peek underneath. 3–4 minutes for a one-inch steak to develop a deep mahogany crust. It's ready when it releases from the pan without sticking.
  5. Flip once. 3–4 minutes on the second side for medium-rare. Reduce to 2–3 for rare. Add 1–2 minutes for medium.

THE BASTE (optional but transformative)

  1. In the last 60 seconds, reduce heat to medium. Add butter, herbs, and smashed garlic to the pan.
  2. Tilt the skillet slightly. Spoon the foaming butter over the steak repeatedly for 45–60 seconds. The herbs perfume the butter. The butter coats the crust. The crust absorbs everything.

THE REST

  1. Transfer to a cutting board. Rest for 5 minutes minimum. Not optional. Not negotiable. The fibers need time to relax and reabsorb the juices. Cut too soon and the juice runs onto the board instead of staying in the meat.
  2. Slice against the grain if sharing. Serve whole if you're not.

COOK'S NOTE

ZONE 04

The steak is the simplest recipe in this book and the hardest to master. There are no sauces to hide behind. No marinades to compensate. It's you, the pan, and the animal. Every variable matters.

Thickness matters. Under one inch cooks too fast to develop a crust before the interior overcooks. Over 1.5 inches requires a reverse sear or oven finish. One to 1.5 inches is the sweet spot.

Temperature reading: 120°F49°C internal for rare, 130°F54°C for medium-rare, 140°F60°C for medium. Pull 5°F3°C before your target — carryover cooking continues during the rest.

Cast iron is non-negotiable. It gives you the sear, adds trace iron to the food, and will outlive you. Your grandchildren will cook on this pan. Buy it once. Season it forever.

STORE IT

ZONE 05
Fridge
Whole or sliced in an airtight container. Keeps 3–4 days. Best enjoyed cold — sliced thin, fanned on a plate with flaky salt. A cold steak eaten intentionally is not a leftover. It's charcuterie.
Reheat
Low oven, 250°F120°C, on a wire rack for 10–12 minutes until warmed through. Do not re-sear. Do not microwave.
Freezer
Not recommended for a finished steak. The texture changes. Buy, cook, eat.

A steak is salt and heat. That's it. That's what it always was. Everything added on top of that is either enhancement or insecurity.

The Declaration Steak is the recognition that the simplest version of something is usually the truest version. One ingredient. One seasoning. One pan. One decision to stop overcomplicating what was never complicated in the first place.
